It seems like all I’ve been posting lately have been pictures or recipes that involve beef. Here’s one more, from our dinner last night, but I swear some good fish and shellfish meals are coming. I’ve been dragging around a file folder with the classic Antoine’s (New Orleans) recipe for Pompano En Papillote, Baked Oysters with White Wine and Tarragon, and Pesce In Marinatura Cucina Del Mare (Baked Whole Small Fish in an Herbal Marinade). Don’t give up on me!
Meanwhile, we found a great source for steaks at The Apple Market in Pensacola. Buck grilled a couple of porterhouses Tuesday night. There was plenty left for a second meal (I hate waste), and here are the results:
Steak Slices (heated very quickly in a skillet to avoid much additional cooking or toughening — a grind of pepper and tiny bit of butter added)
Stir-Fried Onion, Yellow & Green Sweet Peppers and Garlic (used mix of small amount peanut and sesame oil)
Sauteed Sliced Mushrooms & Scallions, finished with splash of dry white wine
