Take an old-fashioned roasting chicken. Stuff it with an entire unpeeled head of garlic sliced in half, a halved lemon, and a handful of thyme. Rub a little olive oil on the skin, grind some pepper over and be stingy with a few sprinkles of kosher salt. Add a couple of thickly sliced Walla Walla Sweets or Vidalias to the pan and cover them with a cup or so of chicken broth. Put it into a hot oven and roast for an hour and a half.
